Apple fritters

3 cups ap flour

1/2 cup sugar

1 tsp salt

4 tsp baking powder

1 cup milk

1/2 tsp cinnamon

4 apples peeled and diced

2 Tbsp sugar over apples

Vanilla glaze

1/4 cup cream

1/4 cup light corn syrup (but glucose or other syrup will do)

1/3 cup powdered sugar

2 tsp vanilla extract

Peel and chop apples and mix in the sugar and let rest.

Once apples are soft and water collected at the bottom, drain liquid and set aside

Add your grease to a heavy pan or pot. I use a cast iron pan. I like to use lard. Fries best

Mix all dry ingredients in a mixing bowl

Whisk in milk, should have a thick consistency

Add in your apples and fold in.

When your oil is ready (test a small amount. It should fry readily but should not be so hot that its bubbles violently)

Add large spoonfuls of batter. When golden brown and you can see it is cooked half way, flip over

Remove cooked fritters from oil and let drain and dry

Make your glaze. Add all ingredients and whisk together

Dip your fritters, top side only and and let drain
